Biang Biang𰻞𰻞麵,又稱「油潑扯麵/褲帶麵/腰帶麵」,是陝西關中地區的傳統特色美食。其名字源自揉麵、扯麵時發出的「biang」聲。這種麵條寬如腰帶,口感勁道十足,通常搭配辣椒油、蒜末、醋和蔬菜或牛羊肉,香氣濃郁、滋味厚重。Biang Biang𰻞𰻞麵不僅因其獨特的口感而聞名,更因「𰻞biang」字是漢字中筆劃最多的字之一而富有趣味性。
Biang Biang noodles, also known as “belt noodles,” are a traditional specialty from Shaanxi, China. The name “biang” comes from the sound made when the dough is slapped and stretched against the table. These noodles are famously wide, chewy, and ribbon-like, often served with hot chili oil, garlic, vinegar, and vegetables or meat. They are loved for their bold flavors and rich texture. Beyond taste, Biang Biang noodles are also famous because the character “biang” is one of the most complex Chinese characters ever written.

將麵條外包裝拆封放入滾水中,煮至麵條分開浮起,約 2 分鐘,撈至碗中即可食用。
